Special Vegetable Power!

Even conventional medicine recognizes that healthy eating can have a huge impact on chronic conditions such as heart disease, diabetes, high blood pressure, and cancer. Fruit and vegetables contain valuable vitamins and minerals that have protective qualities, but they also have special compounds that appear to provide additional protection against disease. Check below to see what vegetables contain.

  • Antioxidants are naturally occurring vegetable products that mop up the “free radical” by-products of normal body activity, which can increase the risk of cancer, early ageing, and heart disease, to name but a few. The best known antioxidants are Vitamins E, C and some carotenes(A), and occur most commonly in red-orange and dark green leafy veg.

  • Phytoestrogens are a range of naturally occurring plant chemicals which behave like very weak female hormones, simultaneously protecting the body from damage while smoothing out fluctuations caused by the menopause. Soya products are particularly high in phytoestrogens, but fresh veg such as fennel, celery, cabbage and spinach also contain useful amounts.

  • Sulphur compounds found in cabbage, broccoli, and sprouts have been found to have protective anti-cancer functions.

  • Onions and garlic contain special volatile compounds and antioxidants known to discourage blood clotting, counter the rise in cholesterol, and may reduce the risk of some cancers.

  • Folates influence cell division and are important in pregnancy and for maintaining immune system function. They can be found in all green leafy veg, salads and beetroot.

Combatting Cancer

In the UK, one person in every three is likely to experience some sort of cancer during our lifetime. Research has shown that diet can influence our risk, and whether you are perfectly healthy, or have active cancer, it makes sense to look at diet as a way of improving your health. Eden Farms has plenty of experience in preparing special diets for customers on anti-cancer diets, including Gerson therapy, and we will do everything we can to help.

Here is some of the advice available:

  • Reduce the amount of animal protein and fat, including dairy products, from your diet

  • Increase the amount of fresh fruit and vegetables in your diet, to maximize not only Vitamins A, C and E but also many plant compounds found to be beneficial.

  • Reduce the amount of processed food containing high levels of sugars and fats

  • Eat plenty of whole grains products

  • Eat organic food when possible, to reduce exposure to potentially carcinogenic residues
